  • Optional: one garlic clove, finely chopped.

How: mix all ingredients in a bowl. Serve with nachos.

mexican party appetizers pico de gallo

  • One big tomato, diced
  • Half an onion, finely chopped
  • Pinch of sea salt
  • 1 tablespoon of cilantro, finely chopped
  • Optional: one finely chopped serrano pepper (most spicy) or jalapeño pepper (medium spicy) or green bell pepper (not spicy at all). Without seeds in all cases.

How: mix all ingredients in a bowl. Serve with nachos.

mexican party appetizers beans

  • One can Pinto Beans (around 15 oz / 400 g)
  • Cream cheese (90 g)

How: put beans in a food processor without the liquid (reserve the liquid for adding to get desired texture). Make a soft paste with the beans, add cream cheese until perfectly mixed. Serve with nachos.

mexican party appetizers quesadillas

  • Corn, flour or whole wheat tortillas
  • Cheese. An unmatured Monterey Jack, or Cheddar will be fine for replacing the traditional Mexican Adobera, Oaxaca or Asadero cheeses

How: heat the tortilla in a grill pan on low heat, add a good amount of cheese in one half. Don't be too generous though as the cheese will melt and may fall out of the tortilla haha ;) When the tortilla is soft (after about 2 minutes), fold it over. Flip it over in one or two minutes more, when the cheese has melted, but the tortilla is still soft. Some people prefer to leave them a little longer in the grill, so the tortilla turns crunchy.

Serve with any Mexican hot sauce! Try Chilli No. 5's Mexican hot sauce if you're feeling fancy and want super healthy hot sauce made with superfoods - it's actually Aprylle's brother's hot sauce company! ;) - they also have very cool hot sauce gift packs with lots of different sauces in test tubes that make great gifts. ;)

mexican party appetizers esquites

  • 2 fresh corn on the cob (white or sweeter yellow are fine), or good quality tinned corn
  • Half an onion, finely chopped
  • 2 tablespoons of butter
  • Sea salt
  • Various toppings (lemon juice, salt, chili pepper, mayo, sour cream, salty grated cheese)

How: Cut the corn grains off the corn on the cob. In a pan on medium heat, melt the butter, add the onion and the grains of corn. Cook for 5 minutes. Add water to cover it, add 1/2 a teaspoon salt. Cook covered for 20 minutes or until the corn is soft. Serve with all of the toppings listed above to get the full Mexican street food experience!
